The red wine
History of the Wine – Wine designed to demonstrate the longevity and elegance of red wines from the Lisbon region. Winemaking and Ageing – Total destemming pre cold fermentation, fermentation with controlled pumping over, slight contact with wood after controlled stage on fine lees.
Tasting Notes and Pairings – Garnet colour, somewhat circumspect on the nose with notes of vanilla and spices, wine with body and structure.
The white wine
History of the Wine – White wine made from white Portuguese grape varieties characteristic of the Lisbon region. Winemaking and Ageing – Total destemming, smooth crushing, moist cleaning using a physical flotation process, cold fermentation, stainless steel storage stage.
Tasting Notes and Pairings – Fresh and fruity white, with aromas of white pulp fruit like bananas and melons. It presents itself with harmony and some persistence. Pairs well with seafood and fish dishes.
